Injeolmi is a chewy and sweet Korean rice cake covered with roasted soybean powder. While I like all rice cakes, injeolmi definitely has a special place in my heart because of childhood memories I associate it with :)
It's slightly glossy,silky, and chewy (just like mochi dough) at first, then it gets really puffy, airy, and pillowy.
